Bar Cookies: Jam Squares

1 ½ cups wheat starch
½ teaspoon salt
¾ cup confectioner’s sugar
2/3 cup firm butter or margarine
½ cup jam or preserves (any flavor)

Preheat oven to 350 degrees. In a mixing bowl, combine wheat starch, salt, and sugar. Cut in margarine until crumbly (mixture will be very dry). Reserve one cup crumb mixture for topping. Gently press remaining crumb mixture into ungreased 9-inch square baking pan. Bake for 12 minutes. Spread with jam. Top with reserved crumbs. Cool completely before removing from pan.
